Make sure that no platforms are selected when you create your stream and the show will be set to 'Record' only. You'll have to hit the 'Record' button for the recording to start and hit 'End Recording' when you're done.

Record your episode first, then schedule it to go live on the date and time you normally would. Make sure you schedule an announcement the day of several hours before to give people a reminder to watch your show.
